Salumificio Santoro has been producing traditional cured meat for thirty years in the heart of the Itria Valley, in Cisternino, including Capocollo di Martina Franca, the undisputed king of Apulian cured meat. In addition to the excellent quality of the raw material, our cured meat has some characteristics that distinguish it and make it unique, because it is linked to our territory: flavored with “cooked wine” from grapes of the Verdeca vine, and smoked with the bark of “Fragno”, a type of oak that is present in Cisternino and Martina Franca and throughout the Valle d’Itria.

The Vignola wood-burning oven is located in Casalini, a small hamlet of Cisternino on the edge of the splendid Valle d’Itria. The company started in 1987 in a small and ancient room with an old recovered wood oven, currently uses a new laboratory of over 600 meters, which, although equipped with modern packaging equipment, preserves the traditional craftsmanship, thanks to a large stone oven (fueled by the wood of dried olive trees) and a team of highly qualified and motivated staff.

In the heart of the Itria Valley, among millenary olive trees, the family organic farm of D’Amico Pietro is born.
Since 1917 it has been producing high-quality oils deriving from organic farming under the Trisole brand.
Trisole extra virgin olive oil is produced from olives of ancient centuries-old trees, harvested by hand from mid-October to mid-December, carefully selected and cold-pressed. The processing techniques faithfully pursue traditional systems, making use of modern systems that guarantee a product of remarkable and certified quality capable of satisfying the needs of the new consumer.

On August 27, 1956, twenty-two wine producers came together to set up the Cantina Sociale di Cisternino. The territory of the Itria Valley has always been cultivated with vineyards and olive groves with a competence that has been refined over time. Here the vine finds its ideal environment in the hills and in the nature of the soil, producing a red wine with a delicate aroma, a clear flavor, extremely pleasant and soft. White wine has the scent of Malvasia and a harmonious and velvety flavor.
The Upal Social Winery has prepared a tasting room perfect for welcoming groups who want to visit our company and through wine tastings also savor the gastronomic tradition of the Itria Valley.

  • A person in charge will explain the choices made during the planting phase and all the aspects, anecdotes, scientific notions of the grape life cycle.
  • Visit the cellar where the processes of fermentation, vinification, ageing and preparation for bottling will be explained in detail.
