The Paste’s house pasta factory offers gastronomic specialities typical of the Daunia mountains, such as pizzelle, laganelle and tacconetti, obtained from a careful selection of raw materials and accurate manufacturing and packaging processes. In the activity of the pasta factory, the ancient peasant tradition is respected which foreseen genuine and simple dishes or the use of vincotto, biscuits with figs, walnuts, pupatelli and calzone with chestnuts during the Christmas period or mash for the period Easter. In general, both the pasta and the desserts are typical of the local tradition and obtained according to traditional recipes and using genuine ingredients and at 0 km and maintain a perfect balance between original flavours and quality of the ingredients also respecting the Mediterranean diet. Founded in 1976 and based in Galatone (LE), the Comune Agricola Lunella is an organic farming company born from the initiative of Father Bruno Stefenelli and some young people who decide to devote themselves to the cultivation of a small plot of land as an alternative to emigration and as a commitment to promote and enhance the resources of the territory. Hence the choice to practice organic farming was even before the birth of certification bodies, excluding pesticides and chemical fertilizers, bearing in mind the climatic-environmental aspects that favour crops. From a community of young people, we gradually pass to a community of families who live on the company’s grounds sharing the same ideals.

The Itaca association has been managing the Luna rural laboratory project for 6 years through the regeneration of an abandoned rural space and the recovery of traditional agricultural products, in particular, saffron and Galatone apricot, and apricot variety now abandoned due to the advent of new commercial varieties. The main activity of the GALATEA 1931 AGRICULTURAL Cooperative is the transformation of the olives given by the members into oil and the marketing of extra virgin and virgin olive oil. In the current context, with the crisis triggered by the xylella fastidiosa bacteriosis, a replanting program has started with the supply to members of certified olive trees and innovative technical equipment essential for the planting of a modern olive grove.
Since 2020, the OPERA SEME project has been launched in collaboration with Caritas Diocesana Nardo’-Gallipoli and the IPSO FACTO Social Cooperative which deals with the marketing of extra virgin olive oil directly to the consumer through direct and online sales.

Gustavo was born in the 2000s, initially as a small seaside restaurant that a few years later moved to the hinterland, specifically in Galatone in a lovely 1940s residence with an adjoining suggestive garden. Thus began a project that in the space of a few years is consolidated due to its characteristics mainly linked to the criteria of hospitality and responsible food linked to the territory.
